Avocado-Craisin Chicken Salad
Hand-shredded rotisserie chicken (we buy ours from Superstore)
Some Hellmann's mayo
Craisins
Ripe Avocadoes
A couple of dashes of cayenne
Salt and pepper to taste
1. Combine!
I really wish I had a photo for this cuz it looked all sorts of awesome...but I will remember the next time I make it. I basically had a couple of nearing-overripe avocadoes and was trying to find a way to use them. Since I had a rotisserie chicken in the fridge, I thought it would be smart to make some chicken salad with the two ingredients. Apologies for the weak instructions/measurements - when I cook, I do it pretty much all to taste. I served this between two slices of multigrain bread and a generous amount of alfalfa sprouts. It was quick and super easy - and FINGERLICKING GOOD.
