hot chicken sandwich

One of my fondest memories of cafeteria food was this dish - which I recently (actually, it's been a few months) because I had all the right ingredients and my brother (who has equally fond memories of this) was in town.

For some strange reason, cafeteria food was actually really decent at my elementary school. Whenever there would be special meals (spaghetti, turkey dinner, hot chicken sandwich), you would have to "reserve" one and buy a ticket in advance. That, for some reason, always made it extra exciting. (Or maybe I was just a really sad boring kid)

The best part is that eating this dish still fills me with glee. And it made my brother laugh. I mean, when it comes down to it, it's roasted chicken...on a piece of white bread...smothered in gravy and peas. And you eat it open faced with a fork and a knife...REALLY GHETTO FOOD. I guess I'm just the nostalgic type.
